The Holidays


Well we are renting a van for 4 days from the 22nd til the 26th. That Saturday my friend is getting married down by the beach! I am so excited. Joe actually has to work Sunday-Thursday! Sunday the family is having a get together for all the 3rd and 4th cousins etc. So right after he gets off work at 3:00 we have to rush over there down to the beach. How long will that take? 2 hours? 3 hours? I have no clue. Tuesday he has to work for like 20 minutes, believe it or not. He HAS too! Then we have to be at my Aunt's by 10:00 a.m. That should take about 90 minutes.

We are having our traditional German potato pancakes for breakfast. Normally we have ham and/or turkey for dinner but this year my Aunt said they are making rice and curry for dinner, with some orange chicken thrown in for good measure. Is Mc Donald's going to be open? lol I can't stand curry!

Do any of you have a traditional holiday meal that you do? What are your plans for christmas?

I'd love to get your recipe for the potato pancakes.

I think Jack in the box is open Christmas day. Talk about non-traditional! Personally, I love curry, but not on Christmas!

We always do ham on Christmas. Would like to get Honeybaked but not sure yet if I can squeeze it out of the grocery budget. I may have to go with the sprial ham they sell at Sam's, which is pretty good.

We won't be doing any traveling, just our family here at home. It will probably take us until evening to get all the packages opened though!

Well I dont have a "set" recipe for it. It is just one of those things I grew up making. lol I'll try.

Potato Pancakes

Heat up some oil in a frying pan. enough to fry these pancakes in.

Rinse off and peel some potatoes, however many you think your family can eat, I know my Aunt when she is doing for the family she says she always counts one potato per person then throws an extra one in.

Okay now grate them

Put potatoes in a bowl

So if you have 8 potatoes get 1-2 eggs, put that in the bowl

Rinse off and chop up one bunch of green onions

Put those in the bowl

Put in about 2 tbs of flour

Throw in a dash of salt to taste.

Mix it up

Scoop out some of the potato mixture and put in frying pan, continue until pan is full

I forget how long they take but just watch them. You basically want them crispy on both sides.

Put on a plate with napkins to soak the grease. Put apple sauce on top.

I hate jack in the box. haha I will survive there will be chicken and rice and vegetables and I am bringing many desserts and she wants me to bring some home made bread too. So I will be fine but I have chicken and rice a few times a week at home so ....

Yeah my dad used to do that some years, stand in line for some honey baked ham. I am sure you will do a great job on the ham. :)

That is nice no traveling. But we do enjoy getting out and especially getting to visit the family. Yeah most of our packages are open here. lol I don't care. We are going to be gone on Christmas. Maybe x~mas eve we will open the rest. :)

When I seen my aunt on x~mas and we were frying up the potato pancakes I specifically asked her about the potatoes and she said of course it all depends on what else you are serving with it.

But generally she said 2 medium potatoes per person.
